Located on rue du Pont-Guilheméry, Bécario has established itself as one of Toulouse’s strongholds of boutique wines. At its helm, Manuel Garnacho, a passionate individual, successfully imposed his high standards in oenology onto the cuisine. Starting as a mathematics doctorate student, he explored wine bars, eventually building a remarkable collection of valuable bottles in his cellar. A decade ago, Bécario was born. He initially hired a young chef, Balthazar Gonzales, to manage the food menu that accompanies the fine beverages.

The wine dictates the path at Bécario, with over 1,500 references in the cellar, focusing on independent winemakers and natural, organic, and biodynamic practices. Customers can enjoy a drink on-site or take a bottle home to pair with a meal, all under a transparent pricing scheme. The large counter, a hotspot of the establishment, encourages discussion and tasting guided by the knowledgeable sommelier chef Clara Kalawon.

In the kitchen, the philosophy remains consistent – seasonal products, creativity without fuss, and a menu that evolves weekly. Currently headed by Marc Lefèvre, a former sommelier turned chef, the cuisine embodies a bistro spirit with a focus on gourmet dishes. The lunch formula at 24€, with iconic pommes dauphine, is a crowd favorite, featuring dishes like fresh leek salad, olive ragout, and refreshing orange salad with granola.
